采用浸入法,测定葡萄糖、苯乙酮酸和扁桃酸等3种物质在固定化酵母细胞海藻酸钙凝胶内的有效扩散系数.实验结果表明,相同条件下,葡萄糖的有效扩散系数De随着海藻酸钠浓度的提高而下降,优化的海藻酸钠质量分数为0.02.葡萄糖的有效扩散系数大于扁桃酸和苯乙酮酸.初始包埋量为54.4 g.L-1的固定化酵母细胞经增殖8 h后,扁桃酸在胶珠内的有效扩散系数为0.36×10-4cm2.min-1,明显小于未增殖或未包埋细胞.

By immersion method,the authors meausured the effective diffusivity of glucose,phenyelglyoxylie phenylglyoxylie acid and mandelic acid within alginate calcium gel with immobilized yeast cells.Experimental results showed that,under the same conditions,although effective diffusivity of glucose decreased with the increase of alginate concentration,there existed an optimized concentration,0.02 by weight fraction.The effective diffusivity of glucose was higher than that of the other two substrates.The effective diffusivity of mandelic acid with initial entrapped immobilized yeast cells of 54.4 g·L-1 and passing through 8 hour incubation,attained 0.36×10-4 cm2·min-1,which was less remarkably than that of mandelic acid without incubation or without entrapped cells.
