摘要:
研究乳球菌 L5 2 9(乳酸乳球菌乳脂亚种 L5 2 9)的最佳生长条件,取得该菌生长的 C/ N最佳值为 4 .5~ 5 .0,及其所需维生素的量 .同时,提出合理的生长培养基配方 .经发酵中试,该菌在 p H为 7.0,温度为 36℃的条件下,活菌数提高 5倍,达到工业发酵剂的菌量要求
Abstract:
A study was made on the optimal growth conditions for the Lactococcus subsp. cremoris L 529. A optimal C/N of 4.5~5.0 and the necessary vitamins were found; and based on which, a reasonabe prescription of culture medium was posed. As discovered by pilot test in fermentation, the number of living bacteria increased up to 5 times under the conditions including a pH of 7.0 and a temperature of 36 ℃.
